- Don’t go too big, your domestic oven may struggle with the heat distribution; 3kg turkey works well.
- If you are using a frozen turkey, ensure its fully defrosted as they can take 3-5 days.
- Skip the stuffing as it increases the cooking time and will dry the meat out.
- Marinate your turkey 48 hours before.
- Take it out of the fridge a few hours before cooking. (45-1hr)
- Cook upside down for ¾ of the cooking time.
